Smothered Pork Chops

Ingredients

4 strips bacon uncooked

4 pork chops (2 lbs. boneless or bone in)

Salt and pepper

1 tsp paprika

1 tsp garlic powder

8 oz. mushrooms

2 cloves garlic (minced 2 tsp)

2 tsp dried thyme

1 tsp oregano

1 T oil

2 T gluten-free flour or flour alternative

¾ c vegetable or chicken stock

 

Instructions

Season pork chops with salt, pepper, paprika, garlic powder, and set aside. Cook the chopped bacon in a large skillet on medium high heat.  Remove when bacon is crisp.  Leave fat in pan. Add pork chops and cook 4 minutes each side (depending on thickness of chop).  When brown remove from pan.

In the same pan add sliced mushrooms and minced garlic to pan, add additional oil if needed.  Cook until soft about 3-5 minutes.  Season mushrooms with thyme and oregano, salt and pepper.  When mushrooms begin to brown add flour alternative and cook until brown in color.

Add stock, blend thoroughly to prevent lumps, and bring to a boil.  Add chops to gravy, reduce heat, cover, and allow to simmer 10 minutes or until pork chops are cooked through (140 degrees).  Top with bacon.  Enjoy!
