Scalloped Turnips

Ingredients

1 ½-2 lbs. turnips sliced

2 T butter

½ onion chopped

2 cloves minced garlic

1 c heavy cream

½ c chicken or vegetable stock

½ tsp salt

¼ tsp pepper

16 oz shredded cheddar

¼ c parmesan cheese

4 oz. cream cheese

1/8 tsp nutmeg

2 tsp thyme

1 tsp oregano

¼ tsp white pepper

 

Instructions

Clean and thinly slice turnips.  Preheat oven to 350 degrees and butter an 8x11 baking dish.  In a pan melt the butter and cook the onions and garlic until translucent.  Add the cream cheese, stock, and heavy cream.  Bring to a simmer.  Season with thyme, nutmeg, oregano, salt, and pepper. Sprinkle in half of the cheese and keep stirring until thoroughly combined.

Place a thin layer of turnips on the bottom of the dish, cover with sauce and cheese. Continue to layer ending with shredded cheese.  Cover with foil and bake 30 minutes covered and an additional 35-45 minutes uncovered or until turnips are tender.  Enjoy!
