Key Lime Mousse

Ingredients:

4 oz cream cheese (room temperature)

4 oz silken tofu (drained)

¼ c powdered sweetener

1 c heavy whipping cream

2 limes (zested and juiced)

 Directions:

In a medium bowl whip cream to soft peaks then gradually add sweetener.  Continue to blend to stiff peaks.  In a large bowl add cream cheese, tofu, zest, and juice.  Blend until smooth.  Using a spatula, fold in whipped cream.  Refrigerate for 30 mins to 1 hour to set.
