Creamed Spinach

Ingredients

2 cups of frozen chopped spinach

4 oz Neufchatel cheese (room temperature)

2 tsp onion powder

2 tsp garlic powder

1 tsp white pepper

¼ cup grated parmesan cheese

¼ cup almond milk (unflavored)

1 T butter or oil 

Instructions

Defrost the spinach in a microwave-safe bowl for 2 minutes.  In a medium sauté pan on medium-high heat, heat the butter or oil.  Add the chopped spinach, and seasonings. Mix well until spinach is thoroughly coated (2-3 minutes).  Add Neufchatel cheese, stir to break up, and reduce heat if needed.  Add milk to help combine. Once the sauce is smooth add the parmesan cheese and taste for flavor.  Enjoy.
