Zucchini Cheddar Muffins

Ingredients

1 ¼ cup almond flour

3 eggs (room temperature)

½ tsp baking soda

¼ tsp salt

¼ tsp black pepper

½ tsp onion powder

½ tsp garlic powder

¼ tsp cinnamon

1 cup + 1 T shredded cheddar cheese

1 cup shredded and squeezed zucchini (1 large)

Instructions

Preheat oven to 350 degrees.  Grate zucchini and squeeze out excess liquid.  In a food processor pulse the flour, eggs, baking soda, and spices until smooth.  Add 1 cup of cheese and zucchini, pulse until combined. (Do not puree).  Spoon batter into lined muffin tin and top with remaining cheese.  Bake 25 minutes.  Cool 3-5 minutes.  Store refrigerated.
