Hamburger Casserole

Ingredients:

½ lb ground (beef, chicken or turkey)

1 carrot (diced)

1 stalk celery (diced)

1 shallot or ½ onion (diced)

½ bell pepper (diced)

1 jalapeno (diced)

4 cremini mushrooms (quartered)

2 cloves garlic

1 cup cheddar cheese (shredded)

1 cup gruyere cheese (shredded)

½ cup water

¾ cup stock (vegetable, beef, or chicken

½ cup milk

1 cup chickpea noodles

1 tsp paprika

1 tsp oregano

2 tsp seasoning mix (optional)

Salt and pepper to taste

Directions:

Brown the ground meat in a pan on medium-high heat.  Drain excess grease if needed.  Add onions, carrots, and celery. Cook until soft about 2-3 minutes.  Add peppers, mushrooms, and garlic.  Allow mixture to cook for 2-3 minutes, stirring occasionally.  Pour in the stock and water and bring it to a slow boil.  Then add your noodles.   Stir, cover, and allow to cook for 5-7 mins. Once the noodles are al dente, add the milk and cheese.  Stir and allow to cook uncovered to reduce the liquid.  Stir occasionally and cook for 5 mins.  Enjoy!
