Berry Cobbler

Serves 4

Ingredients

Filling

2 cups frozen or fresh berries (blueberry, blackberry, cherries…)

1 lemon (zested and juiced)

2 T cornstarch or arrowroot powder

½ cup sweetener

1 tsp cinnamon

 

Topping

¼-1/3 c golden monk fruit sweetener or brown sugar swerve

½ cup old-fashioned oats

¼ cup butter or coconut oil (melted)

½ cup almond flour

½ tsp cinnamon

¼ tsp salt 

Instructions

 

Preheat the oven to 350 degrees.  In a large bowl combine berries, zest, juice, cinnamon, sweetener, and cornstarch.  Place berries in a prepared 9x13 in. baking pan and set aside.  In a bowl add all the topping ingredients.  The mixture should be crumbly.  Sprinkle over berries and press lightly.  Bake 25-30 minutes until bubbly and caramelized.  Enjoy with a dollop of whipped topping.
