Air Fried Chicken

Ingredients

2 boneless/skinless chicken thighs

1 cup flavorless protein powder

1 cup almond flour

2 eggs

2-3 T hot sauce

¼ cup parmesan cheese

Salt/pepper

2 tsp Onion powder

2 tsp Garlic powder

2 tsp Oregano

½ tsp Paprika

¼ tsp Cayenne pepper

Avocado cooking spray

Instructions

Clean and wash the chicken thighs, patting them dry. Prepare an area with 3 bowls or plates for coating the chicken and a plate or rack for the coated chicken.  In one bowl add the protein powder and half the seasonings and set aside.  In the second bowl whisk the eggs with the hot sauce and in the third bowl add the almond flour, remaining seasoning and parmesan cheese.  Using one hand place a portion of the chicken in the protein powder to coat.  Remove it and add it to the egg mixture, be sure to coat both sides.  Allow it to drip, then add to the almond flour mixture, evenly coat, and shake off the excess and place on the rack.  Continue with the other pieces.  Preheat the air fryer to 380 degrees.  For thicker crust, dip the chicken in the egg mixture and the almond flour a second time.  Spray lightly with the cooking spray and place in the air fryer. Do not crowd the basket.  Depending on the size of the chicken and your air fryer it may take 18-25 minutes to cook.  Final temperature should be at least 165 degrees.
